Quinoa Kale Salad
Quinoa is an ancient whole grain that’s high in protein and fiber. This recipe combines quinoa with kale for a highly nutritious blend of whole grains and vegetables.
Prep & Cook Time: 25 minutes
Yields: 4 servings
1 ½ cups water
¾ cup quinoa
Juice and zest from 1 lemon
2 tsp olive oil
½ cup green onions, chopped (about 6 green onions)
6 cups kale, stems removed, chopped
¼ cup pine nuts
2 oz Feta cheese, crumbled
Salt and pepper to taste
In a medium saucepan, bring water to a boil. Stir in quinoa, lemon zest, salt and pepper. Reduce heat, cover, and let simmer for 20 minutes.
Reduce heat to low. Mix in olive oil, green onions, and kale. Cover for 2-3 minutes to allow kale to soften slightly.
Mix in lemon juice, feta cheese, and pine nuts. Serve warm or chilled as desired.
This recipe is very versatile. It’s great as a side dish especially when paired with fish like our So Simple* Dijon Salmon. It also makes a great lunch that’s easy to prepare in advance.
You can use red or white quinoa for this recipe. Or try mixing ½ cup white quinoa with ¼ red quinoa to add a pop of color to the salad.
